How do I setup the brakes on my mod to be as close to the real machine as possible and stop it from tipping foward

Do it like probably the most modders: take the brake values from a similar default vehicle. If you are not satisfied, adjust them by changing and testing manually.

okay thanks how do I remove the front brakes (or lower them)

The game engine does not distinguish between front and rear brakes. The vehicle is braked as a whole.
If your vehicle tilts during braking, the components' "centerOfMass" are probably wrong.
